
A graduate of Johnson & Wales Culinary Arts program, Chef Matt has worked in such renown restaurants as Le Cirque, Commanders Palace, the Coyote Cafe, the Union Square Cafe and La Caguoille. In 1995 he founded Bistro 315 and won Zagats Best New Restaurant and the Award of Excellence, and the Following year Esquires top 25 Best New Restaurant for his work at Il Piatto, Cucina Italiana.
He was nominated for a James Beard Award, recieved four stars for each of his places by the Albuquerque Journal, has been featured in Bon Appetite, Esquire, Gourmet, the Times-Picayune, USA Today, Southern Living, Food and Wine, Travel & Leisure, Southwest Airlines Spirit, New Orleans City Business, American Way and has been consistently praised for his regional authenticity by a host of periodicals.
